Potato-Bacon Breakfast Pie
1 lb. bacon, crisply cooked & crumbled
9" pie crust
2 C. frozen shredded hashbrowns, thawed
1/2 C. shredded cheddar cheese
4 eggs, beaten
1/4 C. milk
Directions
Arrange bacon in pie crust, layer evenly with hasbrowns & cheese. Combine eggs and milk; pour over cheese.
Bake at 350 for 40 minutes and the center is set.
Let stand for 5 minutes before slicing.

Honey Cream Spread
3 oz. pkg. cream cheese, softened
1 Tblsp. honey
1 tsp. lemon juice
Directions
Combine all ingredients; mix well.
Keep refrigerated. Makes 1/3 cup.

Creamy Apple Butter Spread
8 oz. pkg. cream cheese, softened
1 C. Apple Butter
Directions
Whip cream cheese and apple butter together until smooth.
Keep refrigerated. Makes 2 cups

Maple-Pumpkin Butter
3 C. Canned Pumpkin
1/2 C. Brown Sugar, packed
1/2 C. Maple Syrup
1/3 C. Apple or Pear Juice
2 tsp. Cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground cloves
Directions
Combine all ingredients in large saucepan over medium heat, bring to a simmer. Cook 5 to 10 minutes, until well blended. Pour mixture into 13 x 9 pan sprayed with non-stick cooking spray. Bake at 300 for 1 hour and 15 minutes, stirring every 20 minutes until thickened. Remove and cool slightly. Store in air tight container. Keep refrigerated. good up to 4 weeks.

White Chocolate Crunch
3 pkgs. microwave popcorn, popped
16 oz. pkg. white melting chocolate
1/4 C. creamy peanut butter
2 C. salted peanuts
2 C. rice crispies cereal
Directions
Place popped corn in large bowl or roasting pan, set aside. Melt chocolate, stir in peanut butter and melt again. Pour over popcorn. Add peanuts & cereal.
Mix well to coat. Spoon onto wax paper and let dry. Store in air tight container.

Cheeseburger and Fries Casserole
2 1/2 lbs. Hamburger - browned & drained
1 - 10 oz can cream of mushroom soup
1 - 10 oz can cheddar cheese soup
20 oz pkg. of crinkle cut frozen french fries
Directions
Mix Hamburger and soups in large mixing bowl and spread into a lightly greased 13 x 9 pan.
Top with fries.
Bake at 340 degrees for about 50 to 55 minutes - or until fries are golden.
**Personal note... We had this for dinner last night and it was delishes. Very simple and easy to make**:yes:

Peanut Butter-Honey Popcorn
16 cups popped popcorn
1 cup sugar
1 cup honey
1 cup creamy peanut butter
1 cup salted peanuts
Directions
Place popcorn in very large pan or roaster. Set aside. Combine sugar & honey in heavy saucepan over medium heat. Bring to a boil stirring constantly ~ cook approximately 5 minutes. Remove from heat and stir in Peanut Butter & Peanuts. Pour over popcorn; toss to coat. Pour onto wax paper and let cool completely.
Break apart after cooled and store in air tight container.

Citrus~Glazed Chicken with Orange Salsa
Ingredients for Citrus Glazed Chicken
6 boneless, skinless chicken breast
1/2 tsp. salt
1/8 tsp. pepper
1 cup orange juice
3 Tblsp. butter
1 Tblsp. cornstarch
Directions for Citrus~Glazed Chicken
Mix Orange juice, butter & cornstarch in small saucepan over medium heat until smooth. Cook, stirring constantly until it thickens & comes to a full boil. Approximately 5 to 7 minutes. Place Chicken Breast on grill or on broiler pan, brush with glaze, grill or broil 12 to 15 minutes, or until juices flow clear. Serve with Orange Salsa
Ingredients for Orange Salsa
2 Oranges, sectioned and chopped
2 Tblsp. green onion, chopped
2 Tblsp. fresh parsley, chopped
1 Tblsp. sugar
Directions
Stir all ingredients together in small bowl ~ cover and chill before serving.

Texas Steak Sandwiches
8 slices frozen texas toast
1 1/2 lbs deli roast beef, sliced
steak sauce to taste
8 slices of provolone cheese
sauteed onion & green pepper
Directions
Bake toast at 425 degrees for 5 minutes. warm steak with steak sauce till most of the juice is evoporated. Divide up among 4 slices top with cheese, along with peppers and onions {if desired}.
Bake at 425 degrees until cheese is melted then combine with the other 4 slices of Texas toast to make 4 sandwiches.

Texas Tomato Salsa
2 - 14 1/2 oz cans stewed tomatoes
1/2 cup onion, finely chopped
1/4 cup diced green chiles
3 Tblsp. fresh cilantro, chopped
1 1/2 Tblsp. lime juice
1 tsp. salt
garlic salt & pepper to taste
Directions:
Combine all ingredients in a chopper and then chill.
This can be used as dip or topping for tacos, enchililadas, etc.

Creamy Cheese Chicken
3 to 4 lbs chicken
2 Tblsp. butter, melted
2 Tblsp. Italian dressing mix
1 - 10 3/4 oz can cream of mushroom soup
1 - 8 oz. pkg. cream cheese, softened
1/2 cup white wine or chicken broth
1 Tblsp. onion, chopped
Directions:
Brush chicken with butter and place in slow cooker, sprinkle with Italian dressing. Cover and cook on low 6 to 7 hours. 45 minutes before serving mix soup, cream cheese, broth and onion in soup pan over low heat. Mix well. Pour over chicken. Cover and cook for an additional 45 minutes.

Yummiest Taters
7 potatoes, cubed
10 slices of bacon, crisply cooked & crumbled
1 cup sour cream
2 - 8 oz pkgs shredded cheddar cheese
1/2 tsp. salt
1/2 tsp. pepper
Directions:
Boil taters until tender - about 25 minutes and drain. Add remaining ingredients and stir about 10 strokes or until well mixed.

Peanut Butter Fudge
18 oz jar peanut butter, creamy or crunchy
16 oz. container of vanilla frosting
Directions:
Combine peanut butter & frosting in medium size bowl; Cook on high setting in microwave for 1 minute. Stir until well blended.
Spread into either an 8 x 8 pan or pie plate. Refrigerate til fudge sets up - approximately 10 minutes.
*We tried this one last night... OMG so easy and very good.... fudge turns out very peanut buttery and creamy - this is the easiest recipe I've found for fudge*:D

Peanut Butter French Toast
1/2 cup peanut butter
12 slices bread
3 eggs
3/4 cup milk
1/4 tsp. salt
1/4 cup margarine
Directions:
Spread peanut butter on 6 slices of bread and top with remaining bread.
Blend together eggs, milk & salt in medium bowl; set aside.
Melt margarine in skillet over medium heat. Dip each sandwich into egg mixture and place in skillet.
Cook each sandwich till both sides are golden. Top with either Maple syrup, jam or jelly.

Mom's Comfort Casserole
1 lb. ground beef
1/4 cup onion, chopped
salt & pepper to taste
1 - 10 3/4 oz cream of mushroom soup
1 - 15 oz can creamed corn
1 cup milk
1 - 16 oz pkg. wide egg noodles, cooked
Directions
Brown ground beef & onion in large skillet over medium heat. Add salt and pepper. Cook until no longer pink and then drain.
Stir in soup, corn and milk; mix well. Simmer about 10 minutes.
Add noodles; mixing well. Cover & simmer over low heat for an additional 10 minutes, then serve.

Beefy Potato Cakes
1 Tblsp. oil
2 onions, chopped
2 cups mashed taters
1 cup roast beef, shredded
salt & pepper to taste
Directions
Heat oil in large skillet over medium heat; add onion and cook until tender.
Transfer onion to a medium bowl; mix with potatoes, beef, salt & pepper. Form 8 patties; return to skillet and cover over medium-high heat until golden brown on both sides.

Pepperoni & Cheese Quiche
1 egg, beaten
3/4 cup flour
1 cup milk
1/2 tsp. oregano
1/8 tsp. pepper
1/2 tsp. salt
1/2 cup muenster cheese, shredded
1/2 cup cheddar cheese, shredded
1/4 cup pepperoni, finely chopped
Directions:
Whisk together first 6 ingreidents. Stir in cheeses & pepperoni.
Pour into an ungreased 8-inch pie plate
Bake at 375 degrees for 30 minutes or until puffy and golden

Cheese~Stuffed Meatloaf
1 1/2 lbs ground beef
1 - 15oz can spaghetti sauce, divided
2 eggs, beaten
1 cup bread crumbs
1/4 cup onion, chopped
1 1/2 Tblsp. dried parsley
1 tsp. salt
1/4 tsp pepper
1 1/2 cup shredded mozzarella cheese divided
Directions
Combine ground beef, one cup sauce & remaining ingredients ~ Except Cheese; mix well. Divide meat mixture into thirds; spread 1/3 of meat mixture into ungreased 9 x 5 loaf pan. Sprinkle half cheese over top ~ repeat layers ending with meat.
Bake uncovered at 350 degrees for 30 minutes.
Spread remaining sauce over top. Bake uncovered for an additional 30 minutes.

Enchilada Casserole
1 1/2 lbs. ground beef, brown & drained
14 oz. can enchilada sauce
10 3/4 can of cream of mushroom soup
10 3/4 can of cream of chicken soup
10 6" corn tortillas, torn
8 oz pkg shredded cheddar cheese
Combine beef, sauce and soup in large bowl. Stir until well mixed.
In greased 13x9 baking pan, layer 1/2 of each the tortillas, meat mixture and cheese.... repeat layers.
Bake uncovered at 350 degrees for 30 mins.

Best ~ Ever Grilled Cheese Sandwich
3 oz pkg. cream cheese
3/4 cup mayo~salad dressing
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1/4 tsp. garlic powder
1/8 tsp. seasoned salt
10 slices bread
2 Tblsp. butter, softened or butter flavored cooking spray
Directions:
Blend cream cheese & salad dressing until smooth; stir in cheeses, garlic powder & salt. Spread half the bread with the cheese mixture. Top with remaining bread; butter outsides of sandwiches. Grill in skillet over medium heat until golden on both sides.
Makes 5 sandwiches
