This breakfast casserole is easy to make, and keeps for a good while in the fridge.
1 - 2 lb package frozen hash brown potatoes
1 - 8 oz pkg shredded Colby / Jack cheese
1 - 8 oz container sour cream
1 - 1 lb package Jimmy Dean sausage (hot, med, mild - your choice)
1 - 10.5 oz can Cream of Chicken Soup
salt
pepper
Thaw potatoes.
Brown sausage in skillet till done, DO NOT DRAIN.
Combine hash browns, cheese, sour cream, sausage and drippings, and soup in a large bowl. Salt and Pepper ( as much as you think you need for 2 lbs potatoes, just remember that you can add more after its cooked but you can't take away).
Mix all ingredients well
Pour mixed ingredients into large baking dish.
Bake at 350 degrees for 60 minutes.
Allow to stand for 10 minutes after removal from the oven.
